Avocado Toast with Garlic Mushrooms

This is a simple breakfast, but one that will satisfy tummies everywhere, and it's an especially good way to get a dose of essential vitamins and minerals like potassium, folate, other B vitamins and fibre.
Ingredients
10 Button Mushrooms
1 tsp Chopped Thyme
1 tbsp Butter
1 tsp Sesame Seeds
1 tsp Crushed Garlic
Bread of choice – we love sourdough
Half an avocado
Rocket and seed mix to serve
Method
Slice 10 mushrooms, and finely chop 1 tsp thyme. In a hot frypan, melt your 1 tbsp butter, and then add the mushrooms. Stir-fry until the mushrooms begin to brown, and then add thyme, 1 tsp sesame seeds, and 1 tsp crushed garlic. Stir for a further minute.
Serve the mushrooms on two pieces of toast topped with ½ sliced avocado. Finish with rocket and a sprinkle of seeds.
Makes one generous serve.
