Chocolate Granola

We added organic cacao powder to our granola and the kids seemed to love it just that little bit more (...ok, so do we)!

Granola is a great way to pack in some extra nutrition for breakfast, or a quick snack on the go. A mixture of seeds, coconut flakes, oats, and nuts will give you a delicious boost of good fats, vitamins, and minerals. Anyone else just eat their granola straight out of the jar whenever they open the pantry?

Try sprinkling this granola on yoghurt, smoothie bowls, or porridge!

Ingredients

2 cups Rolled Oats
1/2 cup Sunflower Seeds
1/2 cup Pumpkin Seeds (Pepitas)
1/4 cup Flaxseed Meal (Linseed)
2 tbsp Chia Seeds
1/2 cup roughly chopped Walnuts
1/2 cup of Almonds
1/2 cup Shredded Coconut
1/4 cup Coconut Oil
3 tbsp Pure Maple Syrup
1 heaping tbsp Pure Cocoa/Cacao Powder (omit this to make our regular granola)
1/4 cup of Dried Cranberries (or dried fruit of your choice)

Method

Preheat oven to 150 degrees celsius.

Combine 2 cups oats, ½ cup each of seeds (sunflower, pumpkin), ¼ cup flaxseed, 2 tbsp chia, ½ cup each of nuts (walnuts and almonds), and ½ cup shredded coconut in a bowl. Melt the ¼ cup coconut oil and mix it with the 3 tbsp maple syrup and 1 tbsp cocoa powder. Pour this mixture into your oat mix. Stir to combine, until the oats are well coated in the liquid mixture. Spread the mixture on a large baking tray lined with baking paper, and bake in the oven for 15 minutes. After 15 minutes, remove from the oven and stir the Granola to ensure even baking. Bake for a further 10-15 minutes, or until golden brown. Remove from oven and sprinkle the ¼ cup cranberries over the granola.

Once cooled, store the Granola in an airtight container.

Makes 8 serves.
