Pistachio Pilaf

Hands up who likes comfort food! As we approach winter here in Australia, our minds (and tummies) start drifting to foods like warm soups, curries and comforting carbs.
This Pistachio Pilaf is super easy and packed with flavour. It’s vegan, gluten free and reheats perfectly! Add your favourite protein, some steamed vegetables, or enjoy it on its own.
Ingredients
1 tbsp Olive Oil
½ an Onion, diced finely
2 cloves crushed Garlic
1 tsp Turmeric
1 tsp Coriander Seed
1 cup White Rice
2 cups gluten free Vegetable Stock
½ tsp Salt
¼ cup chopped Pistachios
Method
Sauté ½ an onion, 2 cloves garlic, 1 tsp turmeric, and 1 tsp coriander seeds in olive oil on a low heat until the onions soften. Add 1 cup of rice, and stir for a minute or so. Add your 2 cups of stock, bring to the boil and then cover and reduce heat to low. Once the liquid has absorbed and rice is cooked, stir through the salt and pistachios. Easy!
Makes 3-4 serves.
