Full of fibre, they help to keep your digestive system moving while also boosting your iron intake to keep you feeling energised. A great source of Vitamin A for reproductive health, vision and to support the immune system; potassium for nerve and muscle function; good fats from the almonds, these bites will keep in the fridge for up to a week, but we bet they don’t last that long!
1 cup Dried Apricots
½ tsp Baking Soda
½ cup Almonds
1 tbs Chia Seeds
1 tbsp Maple Syrup
1 cup Desiccated Coconut plus extra for rolling
Soak 1 cup dried apricots in boiling water and ½ tsp baking soda for 15 minutes to soften. Blitz soaked apricots with remaining ingredients (½ cup almonds, 1 tbsp chia seeds, 1 tbsp maple syrup, 1 cup coconut) in a food processor until mixture resembles a fresh breadcrumb texture. Roll into balls, and coat with extra coconut. Refrigerate and enjoy!
