Apricot Bites

Having healthy snacks on hand can make eating healthy so much easier. This is where these apricot bites come in! Full of fibre, they help to keep your digestive system moving while also boosting your iron intake to keep you feeling energised. A great source of Vitamin A for reproductive health, vision and to support the immune system; potassium for nerve and muscle function; good fats from the almonds, these bites will keep in the fridge for up to a week, but we bet they don’t last that long!


Ingredients

1 cup Dried Apricots
½ tsp Baking Soda
½ cup Almonds
1 tbs Chia Seeds
1 tbsp Maple Syrup
1 cup Desiccated Coconut plus extra for rolling

Method

Soak 1 cup dried apricots in boiling water and ½ tsp baking soda for 15 minutes to soften. Blitz soaked apricots with remaining ingredients (½ cup almonds, 1 tbsp chia seeds, 1 tbsp maple syrup, 1 cup coconut) in a food processor until mixture resembles a fresh breadcrumb texture. Roll into balls, and coat with extra coconut. Refrigerate and enjoy!
